Sake brewery
今田酒造本店
Imada Shuzo Honten
Founded in 1868, Imada Shuzo is located on the sea front, in the Hiroshima region, known for its particularly fresh water. The brewery is run by a toji woman who promotes ancient and traditional techniques.
This brewery is the only one that uses an ancient strain of rice: Hattanso, which is a larger rice and therefore more difficult to grow.
All the sake there is inspired by the region: its seafood, its agricultural specialties, etc.
